Egg Bites are a quick, delicious, and protein-packed breakfast or snack option, perfect for busy mornings or on-the-go. These versatile bites combine eggs, cheese, and fresh vegetables, and can be customized to suit any taste or dietary preference. Baked to fluffy perfection, they offer a healthy, wholesome treat that’s easy to prepare and enjoy anytime.

  • 6 large eggs
  • 1/2 cup cottage cheese or cream cheese
  • Salt, to taste
  • Pepper, to taste

Cheese

  • 1/2 cup shredded cheese (cheddar, mozzarella, or favorite choice)

Vegetables and Fillings

  • 1/2 cup fresh vegetables (spinach, bell peppers, mushrooms, or any preferred)
  • Optional: cooked bacon, sausage, or diced ham (about 1/4 cup for meat variation)
  • Optional herbs: fresh basil, chives, parsley, dill, thyme, or oregano (1-2 tbsp chopped)
  • Optional: jalapeño slices or hot sauce for spice

Instructions

  1. Prepare Your Ingredients: Chop all vegetables and herbs you plan to include, and grate your cheese. Preheat your oven to 350°F (175°C) to ensure it’s ready for baking.
  2. Mix the Egg Base: In a large bowl, whisk together the eggs and cottage or cream cheese until the mixture is smooth and creamy. Season with salt, pepper, and any additional dried spices you desire.
  3. Combine Fillings: Gently fold in your chosen vegetables, meats, and shredded cheese into the egg mixture, making sure everything is evenly distributed.
  4. Pour into Muffin Tin: Grease a muffin tin or line with silicone molds for easy removal. Pour the egg mixture evenly into each cup, filling them about three-quarters full to allow room for puffing.
  5. Bake to Perfection: Bake in the preheated oven for 18-22 minutes until the Egg Bites are puffed and lightly golden on top. Test doneness with a toothpick inserted into the center — it should come out clean.
  6. Cool and Enjoy: Let the Egg Bites cool for a few minutes before removing from the tin. This resting time helps them set and makes them easier to handle.
