Ingredients

Scale

Beef

  • 8 ounces thinly sliced sirloin or flank steak

Vegetables

  • 1 bell pepper, sliced
  • 1 cup broccoli florets
  • 1/2 cup snap peas
  • 1 small carrot, sliced
  • 2 green onions, chopped (for garnish)

Aromatics

  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced

Sauce

  • 3 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1/4 cup water
  • 1 teaspoon cornstarch
  • 1 teaspoon sesame oil (plus extra for finishing)

Optional

  • Steamed rice or cooked noodles, for serving

Instructions

  1. Prepare the Beef and Vegetables: Slice the beef thinly against the grain for tenderness. Clean and chop all the vegetables into bite-sized pieces. Mince the garlic and ginger to release their flavors, preparing all ingredients before cooking.
  2. Make the Stir-Fry Sauce: In a small bowl, whisk together soy sauce, oyster sauce, water, and cornstarch until smooth. This mixture will thicken during cooking to create a glossy sauce.
  3. Cook the Beef: Heat 1 tablespoon of oil in a large wok or skillet over high heat. Quickly sear the beef strips, cooking just until browned to keep them tender. Remove the beef from the pan and set aside.
  4. Stir-Fry the Vegetables: In the same pan, add garlic and ginger and stir briefly until fragrant. Add the bell peppers, broccoli, snap peas, and carrots, stir-frying until vegetables are tender-crisp and vibrant in color.
  5. Combine Beef and Sauce: Return the beef to the pan with the vegetables. Pour the prepared sauce over everything and toss to coat. Cook for about 1 minute until the sauce thickens and coats all pieces evenly.
  6. Garnish and Serve: Finish by drizzling sesame oil and sprinkling chopped green onions on top. Serve immediately over steamed rice or noodles and enjoy.

Notes

  • Thin slices of beef cook faster and stay tender.
  • Use high heat to sear beef and vegetables quickly without steaming.
  • Do not overcrowd the pan; cook in batches if necessary.
  • Prepare all ingredients ahead because stir-frying is a fast process.
  • Fresh garlic and ginger provide a stronger flavor than powders.
