Instructions

  1. Prepare the Fries: Peel the russet potatoes and cut them into even sticks about 1/2 inch thick. Rinse the cut potatoes under cold water to remove excess starch, then pat them dry thoroughly with a clean towel to ensure crispiness in the final fries.
  2. Fry the Potatoes: Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Carefully add the potato sticks in batches, frying evenly without overcrowding. Fry for 4-5 minutes until they are light golden and tender but not fully browned. Remove with a slotted spoon and drain on paper towels.
  3. Second Fry for Extra Crispiness: Increase the oil temperature to 375°F (190°C). Return the fries to the hot oil and fry for an additional 2-3 minutes until they turn deep golden and crispy. Drain again on paper towels and season immediately with salt and pepper.
  4. Prepare the Gravy: While fries crisp, warm your preferred gravy in a saucepan over medium heat. Stir occasionally to avoid lumps and keep it smooth. Optionally, enrich store-bought gravy with fresh herbs or cracked black pepper for extra flavor.
  5. Assemble the Disco Fries: Place the crispy fries on a serving plate. Scatter cheese curds or shredded cheese evenly over the hot fries. Immediately pour the hot gravy on top so the warmth melts the cheese to a signature gooey texture.
