Ingredients

Scale

Proteins & Beans

  • 2 lbs boneless skinless chicken breasts
  • 2 cans (15 oz each) white beans (Cannellini or Great Northern), drained and rinsed if canned

Vegetables & Aromatics

  • 1 can (4 oz) mild canned green chilies
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • Optional: 1 cup corn (fresh, frozen, or canned)

Liquids & Dairy

  • 4 cups low sodium chicken broth
  • 8 oz cream cheese, softened

Spices & Seasonings

  • 1 tsp ground cumin
  • 1 tsp chili powder
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Prepare the Ingredients: Gather all ingredients, rinse the beans if using canned, and dice the onion and garlic. Prepping ahead helps streamline the cooking process.
  2. Layer the Crockpot: Place chicken breasts at the bottom of the crockpot. Add white beans, green chilies, diced onion, minced garlic, cumin, chili powder, salt, and pepper. Pour the chicken broth evenly over all ingredients.
  3. Slow Cook: Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours, until chicken is tender and fully cooked.
  4. Shred the Chicken: Remove chicken breasts from the crockpot and shred them using two forks. Return the shredded chicken to the crockpot and stir to combine with the beans and broth.
  5. Add Cream Cheese and Optional Corn: Stir in softened cream cheese until completely melted and incorporated. If using, add corn and mix thoroughly to create a creamy, velvety texture.
  6. Final Seasoning: Taste the chili and adjust salt, pepper, or spices as needed before serving.

Notes

  • Use fresh onion and garlic rather than powders for more vibrant flavor.
  • Shredding the chicken helps meld flavors and improves texture.
  • Opt for low sodium broth to better control the seasoning.
  • Adjust seasoning after cooking since flavors intensify during slow cooking.
  • This recipe freezes well—double the batch for easy leftovers.
