Crockpot Cheesesteak Potato Casserole

A savory and hearty Crockpot Cheesesteak Potato Casserole combining tender potatoes, thinly sliced beef, sautéed onions and peppers, and melted cheese, slow-cooked to perfection for an easy family-friendly dinner that’s comforting and flavorful.

Ingredients

Scale

Meat

  • 1 pound thinly sliced ribeye or sirloin beef

Vegetables

  • 4 cups Yukon gold or red potatoes, chopped into bite-sized pieces
  • 1 medium onion, chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced

Dairy

  • 2 cups shredded mozzarella or provolone cheese

Liquids

  • 1 cup beef broth

Seasonings

  • 1 tablespoon Worcestershire sauce
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare the ingredients: Thinly slice the beef and chop the potatoes, onion, and bell peppers into bite-sized pieces to ensure even cooking. Lightly sauté the onions and bell peppers in a hot pan until softened and slightly sweetened.
  2. Layer the ingredients in the crockpot: Place a layer of sliced potatoes at the bottom of the crockpot, then add the sautéed onions and peppers, followed by a layer of sliced beef. Sprinkle minced garlic over the layers and season with salt, pepper, and Worcestershire sauce. Repeat the layering process until all ingredients are used evenly.
  3. Add broth and cook: Pour the beef broth slowly into the crockpot to keep the casserole moist. Set the crockpot to low and cook for 6 to 7 hours, or until potatoes are tender and the beef is fully cooked and flavorful.
  4. Add cheese and finish cooking: About 30 minutes before serving, sprinkle the mozzarella or provolone cheese generously over the top. Cover and allow the cheese to melt completely, creating a golden, cheesy crust.
  5. Serve and enjoy: Once the cheese is melted and bubbly, serve the casserole piping hot directly from the crockpot, portioning hearty servings for the family to enjoy.

Notes

  • Thin slicing the beef and potatoes ensures even and quick cooking.
  • Sauté onions and peppers before adding to the crockpot to deepen their flavor and avoid sogginess.
  • Layer ingredients carefully for balanced flavor distribution.
  • Choose melting cheeses like mozzarella or provolone that hold up well under slow heat.
  • Carefully control the amount of beef broth to avoid a watery or overly dry casserole.
