  • 4 oz fresh sashimi-grade salmon, diced
  • 4 oz crab meat (optional)
  • 2 green onions, thinly sliced
  • 1 avocado or cucumber, sliced (optional)
  • 1 tablespoon sesame seeds

Sauces & Seasonings

  • 2 tablespoons mayonnaise
  • 12 teaspoons Sriracha (adjust for spice preference)
  • Soy sauce or gluten-free tamari (for dipping)

Instructions

  1. Prepare the sushi rice: Cook sushi rice according to package directions. While still warm, season the rice with rice vinegar, sugar, and salt. Spread the rice evenly on a baking sheet and let it cool and dry slightly to help achieve a crispy texture when frying.
  2. Form and fry the rice cakes: Once the rice is cool enough to handle, wet your hands and shape the rice into small compact rectangles or rounds. Heat vegetable oil in a skillet over medium-high heat. Fry the rice cakes for about 3 to 4 minutes on each side until golden and crispy. Drain on paper towels.
  3. Prepare toppings and sauces: Dice fresh seafood like tuna or salmon into small cubes. Mix mayonnaise and Sriracha to make spicy mayo. Slice green onions and prepare any other garnishes such as avocado or cucumber.
  4. Assemble the sushi bites: Place a spoonful of diced seafood on each crispy rice cake. Add a dollop of spicy mayo or your preferred sauce. Sprinkle with green onions and sesame seeds. Serve immediately for optimal crunch and freshness.
