Ingredients

Scale

Main Ingredients

  • 1 cup sushi rice (cooked and cooled)
  • 6 oz fresh salmon fillet, finely chopped
  • 1 tbsp soy sauce (use gluten-free if needed)
  • 1 tsp sesame oil (for frying)
  • 2 green onions, finely chopped
  • Salt, to taste
  • Black pepper, to taste
  • Optional: ¼ cup panko breadcrumbs (for extra crispiness)

Dipping Sauces

  • Wasabi mayo or spicy aioli, for serving
  • Soy sauce, for serving

Instructions

  1. Prepare the Rice: Cook sushi rice according to package instructions. Allow it to cool slightly so it is sticky but not soggy, which is essential for shaping and achieving crispiness when fried.
  2. Mix the Salmon Filling: Gently combine finely chopped fresh salmon with soy sauce, green onions, salt, and pepper until evenly mixed to create the savory filling.
  3. Shape the Bites: Take a small handful of the cooled sushi rice and flatten it into a compact base. Place a spoonful of the salmon mixture on top, then carefully mold another layer of rice over it to encase the salmon, forming firm, bite-sized pieces.
  4. Crispy Pan-Frying: Heat sesame oil in a non-stick skillet over medium heat. Fry the shaped rice salmon bites gently on each side until golden brown and crispy, about 3-4 minutes per side. Fry in batches to avoid overcrowding the pan.
  5. Serve Warm: Transfer the fried bites to a plate lined with paper towels to drain any excess oil. Serve immediately with dipping sauces such as wasabi mayo or soy sauce.

Notes

  • Use day-old or chilled rice for firmer texture and easier shaping.
  • Pat salmon dry before mixing to avoid soggy bites.
  • Fry in batches to maintain pan heat and crispiness.
  • Handle the rice gently to keep the texture light and crunchy.
  • Sesame oil provides best flavor, but neutral oil can be used if necessary.
