Ingredients

Scale

Pastry

  • 2 sheets puff pastry (store-bought, thawed)
  • 1 egg (beaten, for egg wash) with 1 tablespoon water

Filling

  • 1 cup fresh spinach (finely chopped)
  • 1/2 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1 small garlic clove (minced)
  • 1/4 small onion (minced)
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prep the spinach filling: Finely chop the fresh spinach. Sauté the spinach with minced garlic and onion over medium heat until wilted and fragrant. Remove from heat and let it cool completely to prevent pastry sogginess. In a mixing bowl, combine the cooled spinach mixture with ricotta, Parmesan, salt, and pepper, mixing well until fully blended.
  2. Roll out and cut the puff pastry: Thaw puff pastry sheets according to package instructions. Lightly roll out the sheets on a floured surface to smooth them. Cut the pastry into rectangles or squares, sized to your preference for the rolls.
  3. Assemble the rolls: Place a spoonful of the spinach ricotta filling on one side of each pastry piece. Fold the opposing side over the filling and firmly seal the edges by pressing with a fork or fingers to ensure the filling stays inside during baking.
  4. Apply egg wash: Beat the egg with water and brush the mixture evenly over the surface of each roll. This ensures a glossy, golden-brown finish after baking.
  5. Bake until golden and crisp: Preheat the oven to 400°F (200°C). Arrange the rolls on a parchment-lined baking tray with space between them. Bake for 15-20 minutes or until the rolls are puffed and golden brown.

Notes

  • Drain the cooked spinach thoroughly to remove as much moisture as possible to keep pastry crisp.
  • Use cold, well-chilled puff pastry for better handling and flakier results.
  • Do not overfill the rolls to prevent leakage during baking.
  • Apply the egg wash evenly, covering all exposed edges for uniform browning.
  • Monitor baking time closely as oven temperatures may vary.
