Ingredients

Scale

Main Ingredients

  • 12 medium baby potatoes
  • 3 tablespoons olive oil
  • 1 ½ cups sharp cheddar cheese, shredded
  • ½ cup bacon bits, crispy
  • ¼ cup green onions, chopped
  • 1 teaspoon garlic powder
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare the Potatoes: Wash and dry the baby potatoes thoroughly. Place each potato on a cutting board and make thin, evenly spaced slices about three-quarters of the way down, ensuring not to cut all the way through to create the Hasselback effect.
  2. Oil and Season: Generously drizzle olive oil over each potato, making sure to get oil between the slices. Sprinkle salt, black pepper, and garlic powder evenly over the potatoes, massaging the seasoning gently into each cut for full flavor.
  3. Bake to Crisp: Arrange the potatoes on a parchment-lined baking sheet and bake at 425°F (220°C) for 25-30 minutes, until the edges become golden brown and crisp.
  4. Add Cheese and Bacon: Remove the potatoes from the oven and carefully stuff sharp cheddar cheese and crispy bacon bits between each slice. Return the potatoes to the oven and bake for an additional 10 minutes, or until the cheese is fully melted and bubbly.
  5. Garnish and Serve: Remove from the oven and sprinkle freshly chopped green onions on top for color and freshness. Serve warm as a delicious snack, appetizer, or side dish.

Notes

  • Use a very sharp knife or a thin serrated blade for clean, even slices without cutting through the potatoes.
  • Place chopsticks or wooden spoons alongside potatoes while slicing to prevent cutting all the way through.
  • Let potatoes sit at room temperature for 20 minutes before baking for more even cooking.
  • Brush olive oil generously into each slit for extra crispness and flavor absorption.
  • Add cheese partway through baking to ensure it melts perfectly without drying out or burning.
  • For storage, keep leftovers in an airtight container in the refrigerator up to 3 days to maintain crispness.
  • Freeze in a single layer before transferring to freezer bags to keep bites crispy on reheating.
  • Reheat in oven or air fryer at 375°F (190°C) for 10-15 minutes to restore crisp texture.
