Instructions

  1. Prepare and Sear the Salmon: Season the salmon fillets with salt, pepper, and dried Italian herbs. Heat olive oil in a large skillet over medium-high heat. Place salmon skin-side down and cook undisturbed for 4-5 minutes until the skin is crispy. Flip and cook for another 2-3 minutes until just cooked through. Remove from skillet and set aside.
  2. Sauté the Garlic and Sun-Dried Tomatoes: Reduce heat to medium. In the same skillet, add minced garlic and chopped sun-dried tomatoes. Sauté for 1-2 minutes until garlic is fragrant and tomatoes are softened, stirring frequently to prevent burning.
  3. Add Spinach and Cream: Add the fresh baby spinach to the skillet and cook just until wilted, about 1 minute. Pour in the heavy cream, stirring to combine. Let the sauce gently simmer for 2-3 minutes to thicken slightly.
  4. Stir in Parmesan Cheese: Sprinkle freshly grated Parmesan cheese into the sauce. Stir well until the cheese melts completely and blends smoothly into the creamy sauce.
  5. Return Salmon to the Skillet: Nestle the salmon fillets back into the creamy sauce. Spoon sauce over the tops and let simmer together for 1 minute to meld flavors. Remove from heat and serve warm.
