Ingredients

Scale

Chicken

  • 4 boneless, skinless chicken breasts
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1 teaspoon Italian seasoning
  • 2 tablespoons olive oil

Sauce

  • 3 garlic cloves, freshly minced
  • 1/3 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 2 cups fresh baby spinach
  • 1/2 cup freshly grated Parmesan cheese
  • Additional salt and pepper, to taste

Instructions

  1. Prepare the Chicken: Season the chicken breasts evenly with salt, pepper, and Italian seasoning. Heat olive oil in a large skillet over medium-high heat and cook the chicken breasts until golden brown on both sides and cooked through, approximately 5-6 minutes per side. Once cooked, remove the chicken from the skillet and set aside to rest.
  2. Build the Sauce: In the same skillet, add the freshly minced garlic and chopped sun-dried tomatoes. Sauté for about 1-2 minutes until fragrant. Pour in the heavy cream and bring it to a gentle simmer, allowing the sauce to thicken slightly.
  3. Add Spinach and Cheese: Stir in the fresh baby spinach, letting it wilt naturally within the creamy sauce. After the spinach has wilted, mix in the freshly grated Parmesan cheese, stirring continuously until the sauce becomes silky and smooth. Season with additional salt and pepper if needed.
  4. Combine and Serve: Return the cooked chicken breasts to the skillet, spooning the rich creamy sauce over them. Let everything warm together for 1-2 minutes to meld the flavors before serving.

Notes

  • Don’t overcrowd the pan: Cook chicken in batches if needed to ensure a perfect sear every time.
  • Use fresh garlic instead of pre-minced for maximum flavor and aroma.
  • Simmer the sauce gently over low heat to prevent cream from curdling.
  • Let the chicken rest after cooking to keep it juicy and tender.
  • Grate your own Parmesan cheese for better melting and superior flavor.
