Instructions

  1. Prepare the Chile Colorado Sauce: Toast the dried guajillo and ancho chiles in a dry skillet over medium heat until fragrant, about 2-3 minutes.   2. Slow Cook the Beef: In a hot skillet, brown the chuck roast chunks on all sides to lock in juices. Transfer the beef to a slow cooker or heavy pot, pour the chile Colorado sauce over it, then simmer gently for 3-4 hours, or until the beef is tender enough to shred easily.
