Ingredients

Scale

Core Ingredients

  • 1 can (15 oz) whole kernel corn, drained
  • 1 can (14.75 oz) creamed corn
  • 1 cup Jiffy corn muffin mix (or gluten-free corn muffin mix for gluten-free option)
  • 1 cup sour cream or Greek yogurt
  • 1/2 cup (1 stick) butter, melted
  • 2 large eggs

Optional Ingredients

  • 1 cup shredded cheese (cheddar, pepper jack, or mozzarella)
  • 1/4 cup diced jalapeños or a dash of cayenne pepper (for spicy kick)
  • 1/2 cup chopped bell peppers, green onions, or spinach (for veggie boost)
  • Fresh herbs like parsley, chives, or cilantro for garnish
  • Crushed crackers or breadcrumbs for topping

Instructions

  1. Preheat and Prep Your Dish: Preheat your oven to 350°F (175°C). Grease a casserole dish thoroughly with butter or non-stick spray to prevent sticking and help achieve a golden crust.
  2. Mix the Wet Ingredients: In a large bowl, whisk together the eggs, sour cream (or Greek yogurt), melted butter, and creamed corn until fully combined and creamy.
  3. Add the Dry Items: Gently fold in the whole kernel corn and the Jiffy corn muffin mix. Stir just until mixed to keep the texture light and fluffy.
  4. Add Cheese or Extras (Optional): Incorporate any optional ingredients such as shredded cheese, diced jalapeños, or vegetables at this stage and mix gently for even distribution.
  5. Bake Until Golden: Pour the batter into the prepared casserole dish, smoothing the top evenly. Bake uncovered for 45 to 55 minutes, or until set and the top is golden brown. A toothpick inserted should come out mostly clean with a few moist crumbs.
  6. Cool and Serve: Allow the corn casserole to cool for a few minutes before slicing. This resting period helps it firm up for easier serving and enhances the flavors.

Notes

  • Use room temperature ingredients to ensure even baking without lumps.
  • Stir gently and avoid overmixing to prevent a dense texture.
  • Test for doneness with a toothpick; it should come out mostly clean.
  • Let the casserole rest before serving to improve slicing and flavor melding.
  • Add a crunchy topping like crushed crackers or breadcrumbs before baking for extra texture contrast.
