Crumb Topping

  • 1/2 cup brown sugar
  • 1/3 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 cup cold butter, cut into small pieces
  • Optional: 1/4 cup chopped nuts (pecans or walnuts)

Instructions

  1. Prepare the Crumb Topping: Mix brown sugar, cinnamon, flour, and cold butter pieces in a bowl until the mixture is crumbly. If using, stir in chopped nuts. Set aside to top muffins before baking.
  2. Mix Dry Ingredients: In a large bowl, combine flour, baking powder, baking soda, salt, and cinnamon. Stir thoroughly to evenly distribute the leavening agents and spices.
  3. Whisk Wet Ingredients: In another bowl, beat eggs with sugar until smooth. Add melted butter, milk, and vanilla extract, whisking until all ingredients are well combined.
  4. Combine Wet and Dry Ingredients: Gently fold the wet mixture into the dry ingredients just until no large streaks of flour remain, being careful not to overmix to ensure tender muffins.
  5. Fill Muffin Tin and Add Crumb Topping: Line a muffin tin with paper liners and fill each cup about two-thirds full with batter. Sprinkle a generous amount of crumb topping evenly over each muffin.
  6. Bake Until Golden: Bake in a preheated oven at 375°F (190°C) for 18 to 22 minutes, or until a toothpick inserted into the center comes out clean and the crumb topping is golden brown.
