Ingredients

Scale

Dry Ingredients

  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1 tablespoon sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Wet Ingredients

  • 3/4 cup milk
  • 1 large egg
  • 2 tablespoons butter, melted

Cinnamon Filling

  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon

Glaze

  • 1/2 cup powdered sugar
  • 12 tablespoons milk or cream

Instructions

  1. Prepare the Batter: In a medium bowl, whisk together the all-purpose flour, baking powder, sugar, salt, and ground cinnamon. In another bowl, mix milk, egg, and melted butter until combined. Pour the wet ingredients into the dry ingredients and gently stir until just combined to keep the batter light and fluffy.
  2. Make the Cinnamon Filling: In a small bowl, combine brown sugar and ground cinnamon. This mixture will create the signature cinnamon-sugar swirl inside the pancakes.
  3. Cook the Pancakes with the Swirl: Heat a non-stick skillet or griddle over medium heat and lightly grease with butter. Pour pancake batter into a circle on the skillet. Immediately sprinkle or drizzle the cinnamon sugar filling on top, then use a toothpick or skewer to gently swirl the cinnamon sugar through the batter before it sets.
  4. Flip and Finish Cooking: When bubbles appear and edges begin to set, carefully flip the pancake and cook the other side for 1-2 minutes until golden brown and cooked through.
  5. Add the Glaze: Mix powdered sugar with milk or cream to form a smooth glaze. Drizzle generously over warm pancakes to replicate the classic cinnamon roll icing.

Notes

  • Use room temperature milk and egg for a smoother batter without lumps.
  • Do not overmix the batter; stir just until combined to maintain lightness and fluffiness.
  • Swirl the cinnamon sugar immediately after pouring the batter to prevent it from sinking.
  • Maintain consistent medium heat to avoid burning the cinnamon sugar while cooking.
  • For more precise and decorative swirls, consider using a squeeze bottle to apply the cinnamon filling.
