Ingredients

Scale

For the Chicken Tenders

  • 1 lb fresh boneless chicken tenders
  • Olive oil, for cooking (about 1-2 tablespoons)
  • Salt and black pepper, to taste

For the Cilantro Pesto

  • 2 cups fresh cilantro leaves, packed
  • 1/4 cup pine nuts or walnuts
  • 1/4 cup freshly grated Parmesan cheese
  • 2 garlic cloves
  • 2 tablespoons fresh lemon juice
  • 1/3 cup olive oil
  • Salt and black pepper, to taste
  • Optional: 1/4 teaspoon red pepper flakes (for a touch of heat)

Instructions

  1. Prepare the Cilantro Pesto: Combine fresh cilantro, pine nuts or walnuts, Parmesan cheese, garlic, lemon juice, and olive oil in a food processor. Pulse until the mixture is smooth but still slightly textured. Season with salt and black pepper to taste and add red pepper flakes if desired.
  2. Marinate the Chicken Tenders: Generously coat the chicken tenders with the freshly made cilantro pesto. Let them marinate for at least 15 minutes, or up to overnight in the refrigerator, to fully absorb the flavors.
  3. Cook the Chicken: Preheat a skillet over medium heat and add a small amount of olive oil. Cook the chicken tenders for 3-4 minutes on each side, or until golden brown and cooked through. Alternatively, bake at 400°F (200°C) for 15-20 minutes until done.
  4. Serve Warm: Plate the Cilantro Pesto Chicken Tenders immediately, garnished with fresh lime wedges, chopped cilantro, or toasted pine nuts. Serve alongside your choice of side dishes like a crisp salad, roasted vegetables, or rice.

Notes

  • Always use fresh, vibrant cilantro for the best flavor and color in your pesto.
  • Do not overprocess the pesto; a little texture adds a fresh, rustic feel.
  • Marinate chicken adequately, even overnight, to maximize flavor.
  • Avoid overcooking chicken tenders to keep them juicy and tender.
  • Use a hot skillet to sear the chicken and lock in the juices.
