Ingredients

Scale

Meat and Protein

  • 200g Spanish or Mexican chorizo, sliced into bite-sized pieces
  • 1 can (about 400g) chickpeas, drained and rinsed (or equivalent cooked chickpeas)

Vegetables and Aromatics

  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced

Liquids and Sauces

  • 400g crushed tomatoes (1 can)
  • 500ml chicken or vegetable broth
  • 2 tbsp olive oil

Spices and Herbs

  • 1 tsp smoked paprika
  • Salt, to taste
  • Black pepper, to taste
  • Fresh parsley or cilantro, chopped (for garnish)

Instructions

  1. Prepare the Ingredients: Chop the onion and garlic finely. Slice the chorizo into bite-sized pieces. Drain and rinse the chickpeas if using canned to prepare them for cooking.
  2. Sauté Aromatics and Chorizo: Heat olive oil in a large pot over medium heat. Add the onion and garlic and cook until soft and fragrant. Add the chorizo slices and sauté until they release their oils and become slightly crispy, infusing the pan with smoky flavor.
  3. Add Tomatoes and Spices: Pour in the crushed tomatoes and sprinkle smoked paprika, salt, and pepper. Stir well to combine and cook for a few minutes until the sauce thickens slightly.
  4. Incorporate Chickpeas and Broth: Add the chickpeas and the chicken or vegetable broth into the pot. Bring the mixture to a gentle simmer and cook for about 20 minutes, stirring occasionally, allowing the flavors to meld.
  5. Finish with Fresh Herbs: Taste the stew and adjust seasoning if necessary. Remove from heat and stir in the chopped fresh parsley or cilantro for a fresh, bright finish before serving.

Notes

  • Choose a quality chorizo with robust seasoning and natural casing for best flavor.
  • Allow the chorizo to brown properly when sautéing to develop full flavor.
  • Use fresh spices like smoked paprika for maximum aroma and taste.
  • Simmer slowly to let chickpeas absorb the flavors thoroughly.
  • If the stew is too thick, add extra broth or water to reach desired consistency.
