Ingredients

Scale

For the Bake

  • Butter — for greasing the baking dish and adding richness to the crust
  • 68 Day-Old Croissants — torn into bite-sized pieces
  • 1 to 1 ½ cups Chocolate Chips or Chunks
  • 4 large Eggs
  • 2 cups Milk or Cream (can substitute with almond, oat, or coconut milk for dairy-free)
  • ¼ cup Sugar
  • 1 tsp Vanilla Extract
  • Pinch of Salt

Optional Add-Ins

  • ½ cup Chopped Nuts (almonds, hazelnuts, or pecans)
  • ½ cup Fresh or Frozen Berries (raspberries, blueberries)
  • ½ tsp Ground Cinnamon, Nutmeg, or Cardamom
  • 1 tbsp Espresso Powder (for mocha flavor)

Instructions

  1. Prepare the Croissants: Tear day-old croissants into bite-sized pieces and spread them evenly in a buttered baking dish. Using day-old croissants helps them absorb the custard without becoming soggy.
  2. Mix the Custard: In a bowl, whisk together the eggs, milk or cream, sugar, vanilla extract, and a pinch of salt until smooth and fully combined. This will be the custard base that soaks into the croissants.
  3. Combine Croissants and Chocolate: Evenly sprinkle the croissant pieces with chocolate chips or chunks, then pour the custard mixture over the top, ensuring all pieces are well-coated.
  4. Refrigerate (Optional): Cover the dish and refrigerate for at least 30 minutes or overnight. This step allows the croissants to absorb the custard thoroughly, resulting in a richer, more cohesive bake.
  5. Bake Until Golden: Preheat the oven to 350°F (175°C). Bake the dish for 35 to 45 minutes or until the custard is set and the top is golden and slightly crispy. Let it cool slightly before serving to set perfectly.

Notes

  • Use day-old croissants to prevent the bake from becoming mushy.
  • Chilling before baking improves texture and flavor melding.
  • Do not overbake; the center should remain custardy and soft.
  • Mix different types of chocolate for added complexity.
  • Add a pinch of salt to balance the sweetness and enhance flavors.
