Ingredients

Scale

Main Ingredients

  • 1 lb boneless, skinless chicken thighs or breasts, diced into bite-sized pieces
  • 1 tablespoon fresh ginger, finely minced
  • 2 cloves garlic, finely minced
  • 1 cup jasmine or basmati rice, rinsed under cold water
  • 6 cups chicken broth (preferably homemade or high-quality store-bought)

Optional Ingredients

  • 23 scallions or green onions, thinly sliced
  • 1 tablespoon soy sauce (or tamari/coconut aminos for gluten-free)
  • 1 teaspoon toasted sesame oil
  • Vegetables such as diced carrots, mushrooms, or baby bok choy (to taste)
  • Fresh chili slices or pinch of cayenne pepper (optional, for spicy kick)
  • Fresh cilantro, parsley, or Thai basil (for garnish)

Instructions

  1. Prepare Your Ingredients: Finely mince the fresh ginger and garlic to release their full flavors. Dice the chicken into bite-sized pieces for even cooking. Rinse the rice under cold water until the water runs clear to avoid stickiness in your soup.
  2. Sauté Aromatics: In a large pot, gently sauté the minced ginger and garlic in a bit of oil or toasted sesame oil until fragrant and golden, creating a flavorful foundation for your broth.
  3. Cook the Chicken: Add the diced chicken pieces to the pot, stirring frequently until they are just cooked through but still tender, locking in moistness.
  4. Add Broth and Rice: Pour the chicken broth over the cooked chicken and aromatics, then stir in the rinsed rice. Bring everything to a gentle boil before reducing the heat to a simmer.
  5. Simmer to Perfection: Let the soup simmer uncovered, stirring occasionally to prevent sticking, until the rice is tender and the soup has thickened slightly, about 20-25 minutes.
  6. Final Touches: Season the soup with soy sauce, salt, and pepper to taste. Just before serving, stir in sliced scallions or green onions for a fresh crunch and a pop of color.

Notes

  • Use fresh ginger instead of powdered for the brightest, most authentic flavor.
  • Do not overcook the chicken; add pieces early and remove promptly once cooked to keep them tender.
  • Rinse your rice to remove excess starch, preventing an overly thick or sticky soup.
  • Adjust soup thickness by adding more broth for a lighter soup or simmering longer for a heartier consistency.
  • Use homemade or high-quality store-bought chicken broth to enhance richness and depth of flavor.
  • For gluten-free, substitute soy sauce with tamari or coconut aminos.
  • Brown rice can be used instead of white rice but will require longer cooking time.
  • Slow cooker method: Add all ingredients except rice and cook on low for 4-6 hours, then stir in rice for the last 30 minutes until tender.
