Ingredients

Scale

Proteins

  • 1 lb chicken breast, cut into bite-sized strips

Vegetables

  • 1 cup red bell pepper, thinly sliced
  • 1 cup yellow bell pepper, thinly sliced
  • 1 cup green bell pepper, thinly sliced
  • 2 green onions, freshly sliced
  • 12 cloves garlic, minced
  • 1 tsp fresh ginger, minced

Sauces and Seasonings

  • 3 tbsp soy sauce (or tamari/coconut aminos for gluten-free)
  • 1 tbsp honey or brown sugar
  • 1 tsp chili flakes (optional)

Oils and Others

  • 2 tbsp vegetable oil (canola or peanut oil)
  • 23 tbsp water (optional, to adjust sauce consistency)

Instructions

  1. Prepare Your Ingredients: Slice the chicken into thin, bite-sized strips and cut the bell peppers into thin strips. Mince fresh garlic and ginger, and measure out all sauce ingredients to streamline cooking.
  2. Cook the Chicken: Heat vegetable oil in a large skillet or wok over medium-high heat. Add the chicken strips and stir-fry until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the pan and set aside.
  3. Stir-Fry the Bell Peppers: In the same pan, add more oil if necessary, then toss in the sliced bell peppers along with the minced garlic and ginger. Stir continuously until peppers are slightly tender but still crisp and colorful, about 3-4 minutes.
  4. Combine and Sauce It: Return the cooked chicken to the pan. Pour in soy sauce, honey or brown sugar, and a splash of water if desired. Stir everything to coat evenly and allow the sauce to thicken slightly, cooking for another 2-3 minutes to meld the flavors.
  5. Finish and Garnish: Turn off heat and sprinkle sliced green onions and optional chili flakes over the top. Give everything a final stir and serve hot for optimal freshness and flavor.

Notes

  • Prep all ingredients before cooking for smoother stir-fry process.
  • Use medium-high heat to ensure a good sear on chicken and keep vegetables crisp.
  • Cook in batches if necessary to avoid overcrowding the pan and steaming.
  • Fresh garlic and ginger provide the best aromatic flavor compared to dried versions.
  • Adjust sweetness and saltiness by tasting and modifying honey and soy sauce amounts.
