Instructions

  1. Prepare and Cook the Pasta: Start by bringing a large pot of salted water to a boil and cook the fettuccine according to package instructions until al dente. Drain and set aside, reserving a little of the pasta water to help adjust the sauce later if needed.
  2. Cook the Chicken: While the pasta cooks, heat olive oil in a large skillet over medium-high heat. Season the chicken breasts with salt and pepper, then sear on both sides until golden brown and cooked through, about 5-7 minutes per side depending on thickness. Once done, remove from the pan and let rest before slicing thinly.
  3. Make the Alfredo Sauce: In the same skillet, reduce heat to medium and add butter. When melted, sauté minced garlic until fragrant, about 30 seconds. Pour in the heavy cream, stirring constantly, then slowly add freshly grated Parmesan cheese, whisking until smooth and creamy. Season with salt and pepper to taste.
  4. Combine and Serve: Return the sliced chicken to the skillet and add the cooked fettuccine, tossing everything together to coat the pasta evenly with the sauce. If the sauce feels too thick, stir in a splash of reserved pasta water for the perfect consistency. Serve immediately while warm and creamy.
