Ingredients

Chicken

  • Chicken breast or thighs, boneless (about 1 lb)
  • Salt and pepper, to taste

Pasta

  • Fettuccine pasta (8 oz)

Alfredo Sauce

  • Butter (4 tbsp)
  • Garlic, minced (2 cloves)
  • Heavy cream (1 1/2 cups)
  • Parmesan cheese, freshly grated (3/4 cup)
  • Salt and pepper, to taste

Cheese Topping

  • Mozzarella cheese, shredded (1 1/2 cups)
  • Parmesan cheese, additional for topping (1/4 cup)

Optional Garnish

  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the Chicken: Season chicken breasts or thighs with salt and pepper. Cook thoroughly in a skillet over medium heat until golden brown and cooked through. Let cool slightly, then slice or shred into bite-sized pieces.
  2. Cook the Pasta: Boil fettuccine pasta in salted water until al dente, about 8-10 minutes. Drain well and set aside, ensuring noodles are not overcooked to avoid mushiness after baking.
  3. Make the Alfredo Sauce: In a saucepan, melt butter over medium heat. Add minced garlic and cook until fragrant, about 1 minute. Stir in heavy cream and gradually whisk in freshly grated Parmesan cheese until smooth and thickened. Season with salt and pepper to taste.
  4. Combine Ingredients: In a large mixing bowl, gently toss cooked pasta, shredded chicken, and Alfredo sauce until evenly coated. Transfer half of the mixture into a greased baking dish.
  5. Add Cheese and Bake: Sprinkle a layer of shredded mozzarella cheese over the first half. Add the remaining pasta mixture on top, then finish with another generous layer of mozzarella and Parmesan cheese. Bake in a preheated oven at 375°F (190°C) for 20-25 minutes until bubbly and golden brown on top.

Notes

  • Use freshly grated cheese for better melting and richer flavor.
  • Season generously with salt and pepper to balance richness.
  • Avoid overcooking pasta to maintain texture after baking.
  • Let the bake rest for 5 minutes before serving to thicken sauce and ease slicing.
  • Layer cheese in the middle for gooey pockets throughout the dish.
