  • Optional: Ketchup and mustard, for mixing in or serving

Instructions

  1. Prepare the Beef Filling: Heat a skillet over medium heat. Cook the ground beef with diced onions until the beef is browned and the onions are softened. Season with salt and pepper to taste.
  2. Assemble the Quesadillas: Lay one flour tortilla flat. Sprinkle a generous layer of shredded cheddar cheese, then spoon a hearty amount of the cooked beef and onion mixture evenly over the cheese. Add chopped pickles and optionally drizzle ketchup and mustard. Top with another layer of cheese and cover with a second tortilla.
  3. Cook Until Golden and Melty: Heat a large skillet or griddle over medium heat. Carefully place each assembled quesadilla onto the skillet and cook for 3-4 minutes per side, or until both sides are golden brown and the cheese inside is fully melted.
  4. Slice and Serve: Remove the quesadillas from the skillet and let them rest for a minute. Cut into wedges for easy handling and sharing.
