  • Shredded Parmesan or sharp cheddar cheese

Instructions

  1. Prepare the Cauliflower: Wash the large head of cauliflower thoroughly and chop it into medium-sized florets for even cooking.
  2. Cook Until Soft: Steam the cauliflower florets for 10-12 minutes or boil in salted water until fork-tender but not waterlogged.
  3. Sauté the Garlic: While cooking cauliflower, sauté the minced garlic in butter or olive oil over medium heat until fragrant and golden.
  4. Mash the Cauliflower: Drain cauliflower well if boiled, transfer to a large bowl or food processor, add the sautéed garlic, butter, and cream or milk. Mash with a hand masher or pulse until smooth and creamy; add more liquid as needed.
  5. Season and Serve: Season generously with salt and black pepper. Mix in chopped fresh herbs if desired and serve warm.
