Perfectly balanced with creamy cheese, zesty pesto, and fresh herbs, this quick and easy grilled cheese is ideal for lunch, dinner, or a satisfying snack that captures the vibrant essence of Italian flavors.

Ingredients

Main Ingredients

  • Fresh Mozzarella – soft, creamy slices (about 4 oz)
  • Ripe Tomatoes – medium to thick slices (1 medium tomato)
  • Basil Pesto – about 2 tablespoons
  • Good Quality Bread – 2 slices of sturdy artisan bread like sourdough or ciabatta
  • Olive Oil or Butter – 1-2 tablespoons for grilling
  • Fresh Basil Leaves – a few leaves (optional)
  • Salt and Pepper – to taste

Instructions

  1. Prepare the Ingredients: Slice the tomatoes and fresh mozzarella into even, moderate thickness pieces. If using fresh basil leaves, wash and dry gently. Set aside your pesto and soften butter or prepare olive oil for grilling.
  2. Assemble the Sandwich: Spread a generous layer of basil pesto on one side of each bread slice. On one slice, layer mozzarella slices, tomato slices, and fresh basil leaves if using. Season lightly with salt and pepper. Top with the second bread slice, pesto side down.
  3. Heat the Pan: Preheat a non-stick skillet or griddle over medium heat. Add a small amount of butter or olive oil to coat the pan evenly. Ensure the pan is hot enough to toast the bread without burning.
  4. Grill the Sandwich: Place the sandwich in the pan and press gently with a spatula. Grill for 3-4 minutes until the bread is golden brown, then carefully flip and grill the other side for another 3-4 minutes. The cheese should melt fully and the bread become crisp.
  5. Serve and Enjoy: Remove the sandwich from the pan, let it rest for a minute, then cut in half. Serve warm to enjoy the melted mozzarella and fresh pesto flavors.

Notes

  • Use fresh, high-quality ingredients for the best flavor, especially ripe tomatoes and fresh basil.
  • Cook on medium-low heat to melt cheese thoroughly without burning the bread.
  • Press the sandwich gently with a spatula while grilling for even browning and melting.
  • Pat dry tomato slices before assembling to avoid soggy bread.
  • Let the sandwich rest briefly after grilling for easier slicing and flavor melding.
