Ingredients

Scale

Fish and Protein

  • 500g fresh white fish fillets (such as cod or snapper), firm and fresh

Vegetables and Herbs

  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 3 fresh tomatoes, chopped
  • Fresh cilantro, chopped (for garnish)

Liquids and Fats

  • 400ml coconut milk
  • 2 tbsp palm oil or olive oil
  • Juice of 1 lime

Seasonings

  • Salt to taste
  • Black pepper to taste
  • Chili or hot sauce (optional, to taste)

Instructions

  1. Prepare the Ingredients: Chop the onions, garlic, bell peppers, and tomatoes into bite-sized pieces. Lightly season the fish fillets with salt and pepper. Set all ingredients aside to keep them fresh.
  2. Sauté the Aromatics: Heat palm oil or olive oil in a heavy-bottomed pan over medium heat. Add the onions and garlic, cooking until translucent and fragrant. Add the diced bell peppers and cook until they soften slightly, stirring occasionally.
  3. Build the Stew Base: Add the chopped fresh tomatoes to the pan, stirring to combine with the aromatics. Let the mixture simmer gently, allowing the tomatoes to break down and form a rich, flavorful base.
  4. Add Coconut Milk and Simmer: Pour in the coconut milk and stir gently until smooth. Bring the stew to a gentle simmer and season with salt, pepper, and lime juice. Let the flavors meld together for about 5 minutes.
  5. Cook the Fish Gently: Carefully place the seasoned fish fillets into the simmering stew. Cover the pan and cook gently for 8-10 minutes, or until the fish is cooked through and flakes easily with a fork.
  6. Add Fresh Herbs and Serve: Turn off the heat and sprinkle fresh cilantro over the top. Serve the Moqueca hot with your choice of sides and garnishes for a delightful meal.

Notes

  • Use firm, fresh fish that holds its shape to avoid a mushy stew.
  • Allow the stew base to simmer slowly to deepen flavors.
  • Balance acidity and sweetness by adjusting lime juice and tomatoes to taste.
  • Add cilantro only after cooking to keep its flavor bright and fresh.
  • Use palm oil if possible for authentic taste; olive oil or coconut oil can be used as alternatives.
