Ingredients

Scale

Main Ingredients

  • 1 lb ground beef (80/20 blend preferred)
  • 1/2 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper, to taste

Mushroom Gravy

  • 8 oz cremini or button mushrooms, sliced
  • 1/2 cup diced onion
  • 2 tablespoons butter (or olive oil for dairy-free)
  • 2 tablespoons all-purpose flour
  • 2 cups beef broth
  • Salt and pepper, to taste

Instructions

  1. Prepare the Patties: In a large bowl, combine ground beef, finely chopped onion, minced garlic, breadcrumbs, egg, Worcestershire sauce, salt, and pepper. Mix gently until just combined to keep the patties juicy. Shape the mixture into evenly-sized oval patties.
  2. Sear the Patties: Heat a large skillet over medium-high heat and add a splash of oil. Sear the patties for 3-4 minutes per side until a golden-brown crust forms. Remove patties and set aside, keeping the drippings in the pan.
  3. Cook the Mushrooms and Onions: In the same skillet, melt butter and sauté sliced mushrooms and diced onions until caramelized and browned, building flavorful depth for the gravy.
  4. Make the Mushroom Gravy: Sprinkle flour over the mushrooms and onions, stirring constantly to form a roux. Gradually whisk in beef broth and simmer until thickened. Season with salt and pepper to taste.
  5. Combine and Simmer: Return the patties to the skillet, spoon mushroom gravy over them, cover, and simmer for 8-10 minutes until the patties are fully cooked and flavors meld perfectly.

Notes

  • Use room temperature beef by letting it sit out for 15 minutes before mixing to keep patties tender.
  • Don’t overmix the meat to avoid dense, tough patties.
  • Sear patties without crowding the pan to maintain a good crust and prevent steaming.
  • Add broth gradually when thickening gravy to avoid lumps and keep it smooth.
  • Let Salisbury steaks rest a few minutes after cooking to lock in juices.
