  • 2 cups cherry tomatoes, ripe and juicy
  • 1 block (about 7 oz) good-quality feta cheese
  • 3 tablespoons olive oil, divided
  • 3 garlic cloves, peeled and lightly crushed
  • 8 oz pasta of choice (penne or rigatoni recommended)
  • 1/4 cup fresh basil leaves, torn
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Prepare the ingredients: Preheat your oven to 400°F (200°C). Rinse the cherry tomatoes and pat them dry. Peel and lightly crush the garlic cloves. Set aside your block of feta and choose the pasta type you wish to use.
  2. Roast the tomatoes and feta: In a baking dish, combine the cherry tomatoes, garlic, and a drizzle of olive oil. Place the block of feta cheese in the center, then drizzle the remaining olive oil over the top. Season lightly with salt and pepper. Roast in the oven for about 30 minutes, until the tomatoes burst and the feta softens to a creamy consistency.
  3. Cook the pasta: While the feta and tomatoes are roasting, cook the pasta according to the package instructions until al dente. Drain the pasta and reserve a little pasta water.
  4. Combine and mix: Remove the dish from the oven. Use a fork to mash and mix the roasted feta and tomatoes together, creating a rich, chunky sauce. Toss the cooked pasta into the baking dish and gently stir to coat each piece evenly with the sauce. Add reserved pasta water as needed to loosen the sauce to your desired consistency.
  5. Finish with fresh herbs: Top the pasta with torn fresh basil leaves and a final drizzle of olive oil. Give it one last gentle mix, then serve immediately while warm and indulgent.
