Instructions

  1. Prepare the Roasted Tomatoes: Preheat your oven to 200°C (400°F). Arrange the halved cherry tomatoes on a baking sheet. Drizzle with olive oil, then season with salt, pepper, and minced garlic. Roast in the oven until the tomatoes are soft, slightly caramelized, and vibrant, about 15-20 minutes.
  2. Add the Spinach: While the tomatoes roast, lightly wilt the fresh spinach in a pan over medium heat with a small amount of olive oil. Cook just until the spinach reduces in volume but remains bright green and tender, about 2-3 minutes. Set aside.
  3. Arrange Feta and Eggs: In an oven-safe baking dish or cast-iron skillet, evenly distribute the roasted tomatoes and wilted spinach. Place the block of feta cheese in the center, or break it into smaller chunks for more melty cheese pockets. Crack the eggs gently around the feta and vegetables. Season everything with salt, pepper, and sprinkle fresh chopped herbs over the top.
  4. Bake Until Perfect: Place the baking dish in the oven and bake at 200°C (400°F) for about 10-15 minutes, or until the egg whites are fully set but the yolks remain slightly runny. The feta should be softened and warmed through, creating a creamy texture that blends all the flavors together.
