Baked Cinnamon Crunch Apple Cider Doughnuts

Baked Cinnamon Crunch Apple Cider Doughnuts

Baked Cinnamon Crunch Apple Cider Doughnuts are a light, fluffy, and flavorful treat perfect for fall. These doughnuts combine the warm spice of cinnamon with the natural sweetness and tang of apple cider, baked to perfection with a crunchy cinnamon-sugar coating. They provide an easy, healthier alternative to traditional fried doughnuts without sacrificing flavor or texture.

Ingredients

Scale

Doughnut Batter

  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup sugar
  • 2 large eggs
  • 1/4 cup unsalted butter, melted
  • 1/2 cup apple cider
  • 1 teaspoon vanilla extract

Cinnamon Crunch Coating

  • 4 tablespoons unsalted butter, melted (for coating)
  • 1/2 cup sugar
  • 1 tablespoon ground cinnamon

Instructions

  1. Prepare the Doughnut Pan and Ingredients: Preheat your oven to 350°F (175°C) and lightly grease your doughnut pan to prevent sticking. Measure out and set aside all your ingredients to ensure a smooth process.
  2. Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, salt, and cinnamon to evenly distribute the rising agent and spices, ensuring consistent texture and flavor in each doughnut.
  3. Combine Wet Ingredients: In another bowl, beat the eggs with sugar until creamy, then add melted butter, apple cider, and vanilla extract. Mix until everything is fully incorporated and smooth.
  4. Blend Wet and Dry Mixtures: Gradually fold the dry ingredients into the wet mixture, stirring just until combined. Avoid overmixing to keep the doughnuts light and fluffy.
  5. Fill and Bake: Transfer the batter into a piping bag or a zipper bag with a corner cut off to neatly fill each doughnut cavity about three-quarters full. Bake for 12–15 minutes, or until a toothpick inserted comes out clean.
  6. Prepare the Cinnamon Crunch Coating: While the doughnuts bake, melt butter in a shallow bowl and mix sugar with cinnamon in another bowl. When doughnuts come out of the oven, dip them immediately first in the melted butter, then in the cinnamon sugar mixture to coat thoroughly and achieve a crisp, flavorful exterior.

Notes

  • Use fresh apple cider for authentic flavor and sweetness.
  • Do not overmix the batter to maintain tender, fluffy doughnuts.
  • Grease the pan thoroughly to prevent doughnuts from sticking and breaking.
  • Dip doughnuts in the cinnamon sugar coating immediately after baking while they are still warm for the best crunch.
  • Adjust cinnamon amount or add other spices like nutmeg or cloves to customize flavor.
