Instructions

  1. Prepare the Filling: Rinse and drain the black beans. In a bowl, mash the avocado slightly with fresh lime juice. Add the black beans, shredded cheese, cumin, chili powder, garlic powder, and chopped cilantro. Mix until combined but still chunky.
  2. Assemble the Quesadilla: Lay a flour tortilla flat on a clean surface. Spread a generous amount of the filling evenly over half of the tortilla. Fold the other half over to form a semicircle, pressing gently to keep it together.
  3. Cook Until Crispy: Heat olive oil or butter in a non-stick skillet over medium heat. Place the folded quesadilla in the pan and cook for 3-4 minutes per side, or until the tortilla is golden brown and the cheese is melted inside.
