Ingredients

Scale

Vegetables

  • 1 lb fresh asparagus, trimmed and cut into bite-sized pieces
  • 1 pint cherry or grape tomatoes
  • 2 garlic cloves, minced

Liquids & Oils

  • 2 tablespoons olive oil, divided
  • 2 tablespoons balsamic vinegar

Seasonings

  • Salt, to taste
  • Freshly ground black pepper, to taste

Optional Garnishes

  • Fresh basil or parsley, chopped, for garnish

Instructions

  1. Prepare the Asparagus: Wash the asparagus and snap off the woody ends. Cut the spears into bite-sized pieces for even cooking and easy eating.
  2. Roast or Sauté the Tomatoes: Toss cherry tomatoes with 1 tablespoon olive oil, salt, and pepper. Roast in the oven at 400°F (200°C) for about 10 minutes until they burst and soften. Alternatively, sauté them in a pan over medium heat until tender.
  3. Cook the Asparagus: Heat the remaining 1 tablespoon olive oil in a large skillet over medium heat. Add minced garlic and sauté for 30 seconds until fragrant. Add the asparagus and cook for 4-5 minutes until bright green, tender yet still crisp.
  4. Combine and Glaze: Add the roasted or sautéed tomatoes to the skillet with the asparagus. Drizzle in the balsamic vinegar and gently toss to coat and warm through. Allow the vinegar to reduce slightly, forming a glossy glaze that ties the dish together.
  5. Serve: Transfer the mixture to a serving dish. Garnish with fresh basil or parsley if desired and serve warm to enjoy the vibrant flavors and textures.

Notes

  • Choose fresh asparagus with firm, straight stalks and tightly closed tips for best results.
  • Do not overcook asparagus to keep it slightly crisp and nutrient-rich.
  • Use good quality aged balsamic vinegar for a deeper, sweeter flavor.
  • Roasting tomatoes enhances their natural sweetness and softens their texture.
  • Adjust salt and pepper at the end to balance the flavors perfectly.
