Ingredients

Scale

Chia Pudding Base

  • 3 tablespoons chia seeds
  • 1 cup almond milk (or any plant-based milk)
  • 1 teaspoon vanilla extract
  • 12 teaspoons maple syrup or honey (adjust to taste)

Apple Mixture

  • 1 medium apple, peeled and diced
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 teaspoon maple syrup or honey

Optional Add-ins and Garnishes

  • 2 tablespoons rolled oats (optional, for texture)
  • Chopped toasted walnuts or pecans (optional)
  • Additional cinnamon, shredded coconut, or extra diced apples for topping

Instructions

  1. Prepare the apple mixture: Peel and dice the apple. In a small pan, sauté the diced apples with cinnamon, nutmeg, and maple syrup over medium heat until the apples are tender but still hold their shape, about 5-7 minutes. Set aside to cool.
  2. Mix the chia pudding base: In a bowl or jar, combine chia seeds, almond milk, vanilla extract, and maple syrup or honey. Stir well to break up any clumps. Let sit for 5 minutes, then stir again to ensure even distribution.
  3. Add oats (optional): Stir in rolled oats if you want added texture and chewiness resembling a crumble topping.
  4. Refrigerate overnight: Seal the container and refrigerate the pudding for at least 4 hours or preferably overnight, allowing chia seeds to absorb the liquid and thicken.
  5. Assemble and enjoy: Layer the chilled chia pudding with the warm apple mixture in serving glasses or bowls. Garnish with extra cinnamon, toasted nuts, shredded coconut, or additional diced apples as desired. Serve chilled.

Notes

  • Use ripe, sweet, and crisp apples like Fuji or Honeycrisp for the best flavor and texture.
  • Stir chia seeds a couple of times during the first 30 minutes to avoid clumping.
  • Adjust sweetness gradually, adding more sweetener after chilling if needed.
  • Be generous with cinnamon and nutmeg to enhance the apple crumble flavor.
  • Serve the pudding cold and keep refrigerated until serving.
  • Store leftovers in an airtight container in the fridge for up to 3-4 days; stir before serving.
  • Avoid freezing as chia seeds change texture when thawed.
  • Reheat apple mixture gently if you prefer it warm before assembling.
