Ingredients

Scale

Dry Ingredients

  • 1 cup almonds
  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup protein powder
  • 1/4 teaspoon sea salt
  • 1/2 cup chocolate chips

Wet Ingredients

  • 1/4 cup honey or maple syrup
  • 3 tablespoons coconut oil (melted)
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare Your Ingredients: Gather and precisely measure all the ingredients including almonds, shredded coconut, chocolate chips, protein powder, honey or maple syrup, coconut oil, vanilla extract, and sea salt to ensure smooth preparation.
  2. Blend the Base: Place almonds in a food processor and pulse until finely chopped but not powdered. Add shredded coconut, protein powder, and sea salt, then pulse a few more times to mix evenly.
  3. Mix Wet Ingredients: In a small bowl, whisk together honey or maple syrup, melted coconut oil, and vanilla extract until fully combined to create the binding mixture.
  4. Combine and Stir: Pour the wet mixture into the food processor with dry ingredients and pulse until the mixture starts to clump together and becomes sticky enough to form balls. Stir in chocolate chips by hand to preserve their shape.
  5. Form the Balls: Using your hands, roll the mixture into 1-inch balls. You can make them smaller or larger based on preference, but bite-sized makes snacking easier.
  6. Chill and Set: Place the balls on a parchment-lined tray and refrigerate for at least 30 minutes so they firm up and the flavors meld beautifully.

Notes

  • Use fresh, unsweetened shredded coconut for natural flavor balance.
  • Pulse almonds carefully to avoid over-processing into powder.
  • Adjust sweetness by adding more honey or syrup if desired.
  • Store protein balls in airtight containers to maintain texture and freshness.
  • Make a double batch for convenience; they store well.
