Ingredients

Scale

Main Ingredients

  • 1 lb ground turkey (lean)
  • 1/2 cup breadcrumbs (use gluten-free if needed)
  • 1 large egg
  • 1/4 cup onion, finely minced
  • 2 cloves garlic, minced
  • 2 tbsp fresh parsley or cilantro, chopped
  • 1/4 cup grated parmesan cheese (optional)
  • Salt and pepper to taste
  • Olive oil spray for cooking

Optional Add-ins & Variations

  • 1/2 tsp cayenne pepper or chili flakes (for spicy kick)
  • 1/4 cup shredded mozzarella or cheddar cheese (for cheesy twist)
  • 1/4 cup finely grated carrot or zucchini (for vegetable boost)
  • Other fresh herbs like dill, basil, or thyme in place of parsley

Instructions

  1. Prepare the Mixture: In a large bowl, combine ground turkey, breadcrumbs, egg, minced onion, garlic, fresh herbs, and parmesan cheese if using. Season with salt and pepper, then mix thoroughly but gently until all ingredients are evenly incorporated to maintain a light texture.
  2. Shape the Croquettes: Using your hands, form the mixture into small oval or round croquettes about 1.5 inches in diameter. Make each croquette roughly the same size to ensure even cooking and place them on a plate or tray as you go.
  3. Preheat and Prepare Air Fryer: Preheat your air fryer to 375°F (190°C) for 3-5 minutes. Lightly spray the air fryer basket with olive oil to prevent sticking and promote browning.
  4. Air Fry the Croquettes: Arrange croquettes in a single layer in the basket without overcrowding. Lightly spray the tops with olive oil spray. Cook for 10-12 minutes, flipping halfway through, until golden brown, crispy outside, and fully cooked inside to an internal temperature of 165°F (74°C).
  5. Serve Hot: Transfer cooked croquettes to a plate lined with paper towels if needed to absorb excess moisture. Serve immediately for the best crispy and juicy experience.

Notes

  • Do not overmix the ingredients to keep croquettes tender and light.
  • Keep croquettes uniform in size for even cooking and consistent texture.
  • Use a light, even olive oil spray for browning without excess fat.
  • Check internal temperature with a meat thermometer to ensure safety (165°F / 74°C).
  • Allow croquettes to rest briefly after cooking to improve flavor integration.
  • For reheating, use the air fryer at 350°F (175°C) for 3-5 minutes to keep crispiness; avoid microwaving.
  • Store leftovers in airtight container in the refrigerator for up to 3 days or freeze up to 2 months.
